With concerns over fish farm welfare and ecological impact, making an informed choice is essential. Reliable certifications can serve as a helpful compass for shoppers.

Wild-caught salmon from Alaska, particularly sockeye, often receives top marks for sustainability from leading marine conservation organisations. For farmed options, certifications focusing on aquaculture stewardship and animal welfare are key indicators of better practices. It’s worth noting that while organic standards address feed and fish health, the environmental footprint of some organic farms can still be significant.

A recent tasting of various products highlighted a diverse range of styles and origins. Standouts included a wild Alaskan sockeye with a robust, smoky flavour and firm texture, offering strong sustainability credentials. Another favourite was a thick-cut, oak-smoked salmon from Hebridean farms, which presented a distinctly woody aroma and a very firm bite.

Several Scottish farmed options impressed with their quality. One featured a delicate, nutty smokiness that complemented a rich, buttery texture, while another heritage-smoked product offered a soft, fine texture with a balanced aroma. A more assertively smoked, organic Scottish salmon provided a deep, rich flavour that represents solid value.

Other notable entries included a sweet, umami-forward wild Alaskan salmon and a product with a unique, spicy crust featuring notes of nutmeg and cayenne. A traditionally smoked London cure presented a delicately nuanced flavour with a luxurious, oily texture.

The tasting revealed that excellent smoked salmon is available at various price points, from strong value options to more premium, complex offerings. The key for consumers is to consider both the provenance and the specific smoking style to find a product that suits both their palate and their principles.
